So I've been recently thinking about buying an iPhone..but had a question. I reinstated my contract with Verizon right before the iPhone was realeased...but I really want an iPhone and was wondering how it functions without service. Will I still have access to WiFi and all that good stuff?
 
If you don't want the phone part, then why not get an iPod touch?

You lose the camera, but you get more storage and a thinner form-factor.

Since your comments assume you are keeping cell service with Verizon, why not just pick up the touch?

You could buy a Win Mo 6 phone with Verizon and hack it so it could become an access point to the Inernet and then with an iPod 'iTouch' you could connect via Wi-Fi and surf somewheat like you had an iPhone from any location. Where there was true open Wi-Fi like your office or at home this would not even be necessary.

in your case the Touch is the way to go but I will also add that you would have to hack an iPhone to get it to do anything without activating it.
