I am on second update attempt now. 2018 Mac mini Core i3 model.

I am freaking out now.

Edit: 3rd attempt, updated fine.

I had the same issue with a M1 Mac mini. Blue instead of white. Freaked me out because I was thinking of doing a hard restart but everything worked out great.
 
Same for me, I did panic as well and thought about a reset though decided to leave it and it installed fine.

Yes... It is very scary feeling... I have never seen update resulting this... Funny enough, my Hackintosh was updated fine without issue... LOL
 
Same happened here, but with the 11.2 update a couple of weeks ago. M1 Mac mini. Will update to 11.2.1 soon.

The same for me. I Thought I was alone with this problem ... but not at all.
I've bought my Mini M1 last week and I made the last Update during which my screen freeze like that.
I shut my new screen and after a moment I switchi t on and the problem was gone away.
Now all is OK
