I have a MBP 16" which is Thunderbolt 3. I plan to connect two RAID systems with Thunderbolt 3, one chained off the other. I also need to connect a 27" Thunderbolt Display which is Thunderbolt 2. Is it better to use Apple's TB3>TB2 adapter directly off the Mac to the Display or it is the same to hang the display off the second RAID unit using the adapter there?
 
The 27" only requires about 7 Gbps of display data for 2560x1440. Non-display data is limited to around 22 Gbps. There's 40 Gbps total. So putting the display at then end will not affect your RAID performance by much. You should prove this to yourself with benchmarks for each situation.
