I'm looking for a Thunderbolt 3 Dock that supports 3 monitors. Preferably, it would have at least 2 DisplayPorts.

Anyone know of good ones? I'm having trouble finding any.

Elgato, OWC, and Caldigit are making good ones. I don’t know if you’ll find a double displayport model though.
 
macOS can only use two displays from a single Thunderbolt 3 dock because macOS does not support MST for multiple displays (Apple won't add MST support for multiple displays).

A Thunderbolt 3 dock usually has a DisplayPort output that you can connect one display to, and a downstream Thunderbolt 3 port that you can connect a second display to using a USB-C to DisplayPort adapter or cable.

A Thunderbolt 3 dock with more than two DisplayPort outputs and a downstream Thunderbolt 3 port might be using an MST hub internally. For macOS, you can connect one display to one of the ports that is provided by the MST hub, and the second display to the downstream Thunderbolt 3 port.

A Thunderbolt 3 dock that has two DisplayPort outputs and no downstream Thunderbolt 3 port might not be using an MST hub so you can connect one display to one DisplayPort and a second display to the other.

You're not going to find one due to limitations in macOS as described above. Not all Macs will run 3 external displays even connected directly to the computer.
The Caldigit USB-C Pro Dock (in spite of the name it's actually a Thunderbolt dock) has 2 DisplayPort connectors.
