So I noticed in the display information on "About This Mac", it was showing a 1GB GT 650M on the thunderbolt display - see pic:

Does this mean the display has it's own "built-in" GPU?

OR is it running off the MPB GPU?

It's indicating which computer GPU is running the external display. I believe your computer has a built-in Intel GPU, and the NVIDIA unit. The system switches automatically depending on the demand.

Correct - my MBP is a 2012 (non retina) with 2 GPUs:
