With Thunderbolt now will I be able to use the MBP as a display for my Xbox 360 Slim using HDMI... ?
 
If someone makes a thunderbolt video input device, then sure. They could do the same now with USB though, thunderbolt just gives a bit more bandwidth.

It can't do it without someone building an adapter though, and it would specifically have to be an adapter for video input capture, not video output.

No. The MBP is an initiator, not a target. I doubt it can operate in target display mode.

If you require this functionality, look at an iMac instead. That has a mini DisplayPort and the iMac can indeed act as an external monitor for your video game.
