I want to connect two external monitors to my 15" rMBP. Can I just get two thunderbolt to HDMI adapters and run one from each of the two thunderbolt ports on the rMBP to the HDMI input on the monitors?

I would get a cord that's labeled mini display-port to HDMI instead of thunderbolt to HDMI, because it's cheaper and it still works the same. What I would do is just buy one of those adapters, and put the other HDMI cord into the HDMI port on the right side of the rMBP. Also, if you have a extra HDMI cord, get a dongle so you can use it. Otherwise, get a single mini display-port to HDMI cord.
