Just to know, if I were to be doing complete backups of my internal drive and for whatever reason, my machine either died or needed a lengthy repair, would the Time Capsule be able to restore my full machine on another system without any app hiccups or omissions? Would that also include the full Windows partition if I'd created one on my machine?

Further, would I be able to select say, just my email folder on the Time Capsule backup and import it exactly as-is to my Macbook while I wait for repairs to be done on my desktop, and then use the Time Capsule to bring the mail folder back to my main machine from my Macbook afterwards?
 
Yup, I think that's the way it works. Time Machine doesn't do a full back up, so look at Backups thread which was here few days ago.
