Can I pick a date to restore my Imac from Time Machine? I plan to delete my HD are restore from a week ago? Someway I lost a lot of passwords in Keychain.

I googled for the relevant Apple instructions (for your future reference):

Here is the relevant section from the linked Apple instructions:
"Restore everything from a Time Machine backup
To completely restore your Mac, use the “Restore from Time Machine Backup” utility in macOS Recovery. The disk you're restoring is erased before receiving the macOS and other contents of your Time Machine backup."

WOW THANKS, I did not know you could just restore Keychains..

You are welcome.

You can restore files, folders or the entire Mac (everything). Be aware restoring everything will wipe your Mac boot volume before the restore, so if there is something you want to save then do that before starting restore.
