When I go to "select backup drive" in time machine, the drive I am backing up on has "encrypt backups" checked, but it is greyed out. When reading the Apple help articles, it says if this option is grayed out I tis not available for that particular drive. However, I have other drives that are mounted which has this grayed out and it IS NOT checked. So, I'm wondering if the backup is indeed encrypted, and I cannot modify this setting because I am actively in the middle of a huge backup?
 
Sounds like you are looking at different things, but they make sense.

If a Time Machine drive is not available, you will see Encrypted checked but greyed out. If a drive is not a Time Machine drive, the option is available under options for adding that drive/volume as a backup destination.

If you look at the main screen for Time Machine, it will tell you what drives/volumes are for Time Machine and if encrypted.
