This machine will be hooked up to our network (PC network). Can I have Time Machine back up the Mac Pro to a folder on the server, and if so, are there any issues I need to consider? Thanks.

Network drives with Windows are not HFS+, so probably wouldn't work. However, I have found a couple of links related to having TM backup to a network drive. They are: http://uneasysilence.com/archive/2007/10/12595/ http://smangal.wordpress.com/2007/12/10/time-machine-with-network-drive/
