So I'm returning my current MacBook for a new one. When I get my new one I'm going to restore my old data onto my new MacBook. Apple makes this simple enough per the option at the beginning of the setup.

Here's where I need some guidance. I don't like the name or settings I currently have, such as my home directory name(or whatever you call it). I want all my old programs, documents, music, and such, but I'm not sure how to do this.

Some advise and an outline of the procedure I'd be looking at would be great.

When Mac OS starts for the first time, it'll give you the Migration Assistant option! First create a use account and then use the assistant to restore all your files!
 
So my home directory being named differently won't affect the files that are being restored to it?

P.S.: I've found the assistant utility to be utterly useless! So be prepared to manually drag drop your stuff if it suddenly decides to quit without telling you!
