I am trying to gauge when there will be the most inventory on eBay and Craigslist for iPhone 11 models. Hoping to score one for cheap since there should be plenty but trying to time it. Would there be more used inventory today (where people are trying to unload in anticipation of next week's reveal) or would it be better to wait for the iPhone 12 to release and get in everyone's hands?

There’s no definitive answer because as you mentioned prices will drop the closer you get to the next iPhone release.
The best time is before the release by a few months, but that’s when you’re still using the current model. The next best time is a few weeks before release. After the new model is released there’s a slight drop in value for the older model but nothing inordinately unbelievable, considering they retain value better than competitors and the upgrades are always incremental.
As a side note I’ve become a bit disillusioned with buying the new iPhone every year after seeing current iPhones for $300 off simply by waiting 9 months until after release.

I don't see any scenario where the re-sale price of iPhone 11 goes *up* after the 12 reveal. If you're looking for the lowest price on the 11, wait until the 12 is released. You'll see a flood of postings for the 11 once people start to get the 12 in-hand.
