Is anyone having issues with the weather information in Today summary of the device not showing? Location services for weather is on, and when I go to the weather app it pulls my location and info, but doesn't show in notification center.

Same here. If I remember correctly, I had a similar issue after my last restore on iOS7 but it worked it self out eventually.
 
You are correct, after just letting my phone sit for a bit, it finally showed. Weird.
