Been having a ton of fun customizing stuff on this. One thing I haven't been able to figure out, or been able to find the answer via search, is how to hide app names (icon text.)

Should I be able to do this via Winterboard?

Yes. Winterboard > select themes > no undocked icons and no docked icons
