At what point are be able to find our phones tracking by reference?

I remember previous years being able to find it once it goes to preparing for shipment in the order status? Or am I remembering incorrectly?

I have already been trying. Tried my phone number, account number (T-Mobile order), order number, last name. Nothing is coming up.

You are remembering correctly. There are a number of items that work as the "reference" ... typically, it's the phone number with area code that is associated with your AppleID.
