In previous years, we’ve been able to track iPhone deliveries by logging onto the support portal on apple.com. But now, that site doesn’t exist. Is there any new method to obtain the phone serial number (and therefore be able to Track the phones journey from China)?

I'm not sure of any other way until you receive the tracking number from the UPS, from there, it should the origin tracking path.
 
On UPS, you can track by reference with the phone number or order number (sorry I don't know how it really works with UPS).

Most of the apple product that I order usually ships via Fedex, so when I track by reference I can type my phone number. It shows me that shipment info has been sent to fedex with tracking number. I can usually get this when they go to "Preparing for Shipment state". I'm going to guess that if my orders goes via Fedex, that I likely won't see any movement till Thursday because they typically do Next Day Delivery and comes directly from their warehouse in Mt. Juliet, TN.
