I'm about to switch from my Garmin Fenix 3, which has been with me for years, to an Apple Watch Ultra.
I'm looking forward to finally having a heart rate displayed when I run, as I haven't used a heart rate belt for years. I just don't like a chest strap and when I recently did some runs with a chest strap again, the values displayed were simply not correct. Some of the pulse values were much too high.

Now Apple offers the new feature Heart Rate Zones.

Quickly get a sense of your intensity level. Training zones are automatically calculated and personalized using your health data, or you can create them manually.


Now I wonder how this is calculated automatically? Does it only include runs or also other sports or even my heart rate throughout the day? I'm sure I'll have to use the original training app, or does the automatic also work when I use Workoutdoors?

I would also like to do a lactate threshold test, the Fenix 3 could do that. After the run-in, you were given gradient runs and you could then determine your max pulse quite well.
Is this also possible in Watch OS 9?

Automatically & weekly using your (resting?) HR, but you are able to change it manually.
You can have heart rate zone in every sport activities I presume (I haven’t done every one but I saw it on all I have tried).
 
This means that Heartrate of biking will get into the automatic calculation too?

WorkOutdoors has their own heart rate zone I believe.
