How do I do it?

I'd like to maintain the same work environment as the Yonah was my main computer, and now the Merom will be.

Any issues that I should watch out for?

I think that if you use Migration Assistant, that your old computer will effectively be duplicated on the new one, so the user experience should be exactly the same. Only faster :).
 
Restart the CD iMac in Target Disk Mode and connect to the C2D iMac.

Then fire up Migration Assistant.

A few notes. When you first setup your new iMac make the first user named something other than your user on the CD iMac. This will prevent problems with Migration Assistant.

And I don't know if it was just me but when I used MA QuickTime Pro 'forgot' its' serial number so make sure you have that handy, but again, YMMV.
