Transfer Data From Old Disk?

Is it possible to take the disk out of an old PowerBook, put it in an external FireWire enclosure, and then use Setup Assistant to transfer data over to a new Mac? Or does the old drive need to be in a working Mac in order for the Setup Assistant to see the drive at all?

Alternatively, will an old disk in an external enclosure mount just like any other drive when connected to a new Mac?
