I'm afraid of losing the notes I've been writing since 2014 and that's very important so I'm looking for the safest way

Of course. Just turn on syncing of your notes to iCloud. Sign in to iCloud on the new phone and then you are done.
If the notes are that important to you, you should be saving them to iCloud anyways.

If you backup through iTunes you can restore from backup on your new device and everything from the old device will transfer.
