Transfering info to new Apple Watch (without having previous watch)

Got a question for you all. I plan to sell my Apple Watch Ultra gen 1 tomorrow to someone on Facebook Marketplace. I plan to buy an Apple Watch 11 ( 46 MM GPS+ Cellular) on Friday (Dec 19th) as a Christmas gift to myself. My question is, can I restore my new Apple Watch that is attached to a ATT cell number to my new watch since I won't have the old watch with me? Like, would an iCloud backup work, or would I need to have the old watch in order to transfer everything? Hope this makes sense.

When you un-pair the watch it will create a backup on your iPhone, not on iCloud. When you get your new watch, it should offer to restore from that backup.
Personally, I always setup my watches as new, gives you an opportunity to review all the settings.
