transferring apps from an iphone I just bought used

I just bought a 1st gen iphone from a buddy. I plan on unlocking it with pwngetool for tmobile and maybe jailbreaking it. Before I do that though, I want to be able to keep all the apps that he has on it. I'm in the middle of backing it up now. Besides that, is there any way to make sure I don't lose all those apps? I'm afraid to sync it because I don't have any apps in my itunes(8.0.1)

also, is there any wasy way to delete all his contacts from the phone?
