I'm looking to figure out a secure way of tranferring my itunes library from my old mac to my new one without losing all of the playlists and ratings etc. that I have put countless hours into. I also want to make sure that the data is safely maintained on my original mac. Thanks.

You should be fine if you transfer the ~/Music/iTunes/iTunes 4 Music Library file (where ~ is your home folder), along with all the actual music files, of course...

(don't know if this will work very well if you have unchecked the Keep iTunes Music folder organized option and/or the Copy files to iTunes Music folder when adding to library option in iTunes Preferences -> Advanced, but if you haven't it should work just fine...)
