I have an iPhone 3gs.

I am preparing to upgrade to the 5s.

The computer that I sync(ed) my 3gs to has been dead for quite some time.

Is it possible to transfer all of my music/apps/etc. to the new phone without access to the old computer?

I'm thinking, in particular, can I back-up or sync my current phone to a different computer (without wiping it) and then sync the new phone to that computer? (I'm afraid to experiment by connecting it to the new computer for fear of accidentally wiping it. And I know I can't transfer my music to the new computer from the phone, so I'm skeptical that this will actually work.)

Any other ideas would be VERY welcome!
 
Yeah, you are right. You can transfer the data on your current iPhone to a new computer and then sync the transferred iPhone data to the new iPhone. But Apple doesn't allow direct transfer from iPhone to Mac or PC, so you have to get a third party tool like iPhone to Mac transfer or iPhone to PC transfer to help you do the job. Good luck!
