Ok.....So I took some video's last night and today I actually had them transferred into iPhoto cause I had to get my 3GS swapped out. After I got home and hooked up my new 3GS, I was trying to transfer these video's back to the iPhone but it would only sync the pictures not the video's.

Any advise?
 
You should be able to drag it into the movies section on itunes then sync. I'd try it, but I just did a restore, and am waiting for the 16gs to sync ugh!

Yes, that's correct.

Apple said:
If you delete the photos and videos from iPhone when you upload them to your computer, they’re removed from the Camera Roll album. You can use the iTunes Photos setup pane to sync photos back to the Photos application on iPhone. Videos can’t be synced back to iPhone, however. See iPhone Settings Panes in iTunes.
But I just drag them back into iTunes, and sync them that way. It works, but it's not intuitive. My guess is that they'll fix that in an update.
 
or you could play them on your computer, and using your handy new camera feature built right into the iPhone, you can rerecord them. No cables, no problems! just kidding
