I live in Hong Kong, and used to live in Singapore.

For Hong Kong, Smartone, PCCW and one2free (the one you highlighted) offer a variety of prepaid plans, and in Singapore, Starhub works pretty well (including offering micro-SIMs for iPads).

I wouldn't worry in advance about what to get. Presuming you're in a reasonably touristy area, there will be plenty of corporate mobile stores around and you can just drop in and buy it on the spot.

Edit: Or get it from the airport like you said.
 
In Singapore there are abundance of sim options as the iPhone 5 and ipad mini are being sold here.

3 telcos to choose. Singtel, StarHub or M1, all works equally well. I'm sure the airport sells them all

Do you get a nano sim for the iPhone 5 in Hong Kong?

Which is the best option coverage and data wise.

I dont mind the cost.
