Trends unlocked early - could activity be manufacture date?

I recently (Nov) got my first Apple Watch, an S5, and noticed last month that the activity trends unlocked early - seemingly because of these two days of activity back in September.

Both have 0 cal, 0 move mins, 0 stand but given the current lockdowns I've had too much time to ponder it and wondered if maybe it was the manufacture date? One of the days is actually my birthday so it would be a pretty fun coincidence if so.

Anyone else got an S5 for the first time and has something similar?

I recall other people seeing activity data from before they had the Watch and it was generally put down to final QA of the device. So yours was presumably QAed around that time.
