I have an old version of a music history book that has an accompanying website: http://www.wwnorton.com/college/music/grout6

Problem is, I can't view the site as I don't have Flash 5 installed. Is there any workaround I can do in some browser that would let me see the content in any case? I'm sure any Flash related material will play fine with the updated player...

No. There is not way can you or anyone can view this site since flash 5 is not compatible with newer version of flash or the browser.

I was under the impression that the desktop version of Flash includes both the old 2.0 runtime and the new 3.0 runtime, and that the 2.0 runtime can run 1.0 scripts. Correct me if I'm wrong.
