Trouble updating iPad mini to iOS 8

I seem to be having trouble syncing my iPad mini after updating to iOS 8. After I updated to iOS 8 whenever I try to sync with iTunes the process stalls and will become unresponsive when trying to load my apps until I end up just canceling the process. I have restored the iPad mini and am still having the same problem.
Any thoughts or ideas I could try?
