Hi,

I currently have a Mac Pro with 2GB RAM (2x512MB chips in riser A and 2x512MB chips in riser B).

In order to maximize the memory bandwith should I go with (2x1GB chips in riser A) or (4x512MB chips - filling all of my available memory slots).

I've been researching this, but the whole memory bandwith thing has my confused.

You'd get maximum bandwidth by using just 512 chips. However, that would be limiting your upgradeablity big time. Get 2x1GB chips and put them in the spare slots on riser A. The 1GB chips are also cheaper. You might want to check out the 2GB chips too since they're very good value right now.
 
My strategy would be to go with 2x2gb if you could afford it otherwise you're shooting yourself in the foot, if you want more a year down the road.
