Have OpenSSH setup on my home server, and usually when I'm out with my laptop, I use Putty to tunnel to it, and then setup Firefox to use the Putty Tunnel as my proxy.

How would I do this on the iPod Touch? I suspect I have to do something to tell Safari to use a proxy, but then how do I setup the "tunnel"?

I have searched the forums, but the few answers I found used Jailbroken devices with outside programs. I'd prefer not to jailbreak my new Touch.

Why not install a VPN server on your home computer and have the iphone/ipod connect to that via Settings -> General -> Network ->VPN?

I suppose that's an option... something new for me to learn :D
