Turn Iphone 3g into an Itouch

I will be upgrading my iphone 3g in two weeks. What steps to I need to do to convert my old 3g into an itouch?

Couldn't have said it better myself. Wife and I took out SIM for her 2G so my son could have an iTouch, save money, and re-activate SIM when he is old enough for a phone. Very useful.
