I know there is a away for the Messages and Mail app not to show message previews on the lock screen by turning off Show Previews and it will still show the notification on the lock screen, but is there a away to do this with other apps such as Hangouts or the Gmail app and have the notifications show up on the lock screen without the messages being previewed as well?

Had to read that twice. It very much depends on the developer unfortunately. I have the popup/notification off for my phone but on for my watch so it's a nice tap.
