I'm encoding a few DVD's and leave it over night. Is there a way to turn the screen off? Don't like the idea of the screen being on all night.
 
The easiest is to turn the brightness all the way down. You could try sleeping the display with Shift-Control-Eject, but any movement of the mouse could wake it up again.
 
Somebody gave this to me about a year ago. I don't know C, so I don't really know how it works, but the code is included. Just run it (not the .C file) and it will put your display to sleep.

I used to have it mapped to F19 on my keyboard.

This is what I do to turn the display off

System Preferences -> Expose & Spaces -> Expose -> Active Screen Corners
Select one of the four sides to activate "Put Display to Sleep"

Hopefully this is what you're looking for :)
