Turning iPhone into iPod only?

hi everyone

please forgive me if this has already been posted - i cant seem to find anything maybe im being blind!

but with the arrival of the 3G on friday - i want to turn my old iphone into just an ipod which i can take away on holiday with me just to play tunes (ie no sim card, just the ipod features)

and then on my return i want to unlock it and sell it on ebay.

my question is whats the best way to do both in one hit if there is such a way - if not whats the best way to do it and how?

(EDIT) ive already jailbroken it using ziphone (before i knew they were bad!)

The ipod will work without a SIM card so just take it out. When you go to sell it restore 1.1.4 then I would use iLiberty+ to unlock it.
