I am thinking of getting my daughter a new iPod Touch. I have an iPhone 4 and 4s and I don't see a way to "shut it off" from her using it. Is there a way to do this?
 
Settings > iMessage > slide the button to the Off position. This won't remove the icon though. You can't remove it - it's just like Safari, Settings, Calendar or any other app that came with the iPod.

unless you jailbreak it, i forgot the apps name but there is an app which can remove or hide default apps as-well.
 
Yes, you are right. If you jailbreak your iPod, you can hide default icons using BossPrefs, which can be downloaded from Cydia.
 
So she can't use it. I don't mind her texting, I can see who she texts and I can turn it off from a computer.

I remember that I read a post is baout the imessage, it said that if you sign into the same account in 2 different Apple device. You can see the iMessage content totally when the other device is sending.
