I am wanting to buy some Turtle Beach Ear Force Stealth 500p headphones, and have read that it runs on an Optical Cable..

Yes, the headphone port on your MBPro has an optical connection built-in. All you need is the mini-toslink adapter for a standard toslink cable. Those cables often come with the adapter that you need, packed with the cable.
