So, I purchased my first "season pass" for Rick & Morty season 8, and each week the new ep drops at a different time. It becomes available at 11pm on Sundays on Hulu and supposedly Adult Swim apps, should it not be available at the same time in my library since I purchased a season pass?!? This week I had a friend over to watch as soon as it comes out, since, in previous weeks, I got the notification the new episode was available sometime within about an hour of "air" time, ...and nearly 3 hrs later it still isn't available, WHAT GIVES???

I tried to watch via the Adult Swim app, but, apparently, you need to have a cable subscription for that to work.

So, since this is my first time with the season pass, maybe I just don't know how it works, but, it seems to me the episodes should be available at the same time everywhere, right?

the content owners have a lot of control over how things are released. Every show is different, even things from the same studio/channel may have different schedules. Sometimes streaming is 24 hours after broadcast. sometimes same time. and there's broadcast, the channel's app, and third party apps. so you might have broadcast at time of, then both apps next day. Or the apps could be delayed by a couple hours so the west coast doesn't get it early.

It could also be that it's late night sunday, I would assume their servers have a "release this show at <<time>>" flag on the media and they can upload it whenever. But it could be someone having to manually enable.
 
The last time I bought a season pass for something had to be 15+ years ago. I remember the release time being pretty erratic back then too, and it sounds like it still is. Yeesh.
