When you setup a profile in TVOS, does it keep your icons/apps on the home screen? For example, my wife only uses Netflix and Amazon Prime Video and YTTV. If she logs into her profile on the ATV, can she delete all the other icons/apps from the screen, and just have the apps she uses? Or is this not how the profiles work?

No, it doesn’t do that. The apps and their positions on the screen are synced with the main iCloud account that is logged into the Apple TV. The user profiles only control the iTunes Store content that you can watch as well as the Up Next feature which syncs what you’ve recently watched between devices.
