So far, I have found…
Auto mix now works on Apple Music on the Apple TV.
Easier profile switching within media apps, like TV.
Redesigned podcasts app.
Hi-Res Lossless support in music
New “On Screen Actions” toggle within Siri settings
New “Use with Ask Siri” menu in the settings, currently doesn’t seem to do anything.
Larger text options in accessibility settings

What does “Hi-Res Lossless support in music” mean, hasn’t it been providing this in addition to ATMOS for several years now?
No. Lossless has been in Apple TV since 2021, not hi-res lossless.
Lossless, according to Apple, is between 16 Bit 44.1 KHz and 24 Bit 48 KHz, while Apple calls 24 Bit 96 KHz and 24 Bit 192 KHz "Hi-res Lossless".

Downloaded the beta for hi res lossless but when I go to settings I only see lossless.
Using Apple TV with denon x3800h.
Apple TV connected to denon and projector to denon.
Also previously when I used Apple Music it used to send stereo signal for all music except songs in atmos and I used to upmix it to auro-3d but now it is sending as PCM so I am unable to upmix
What am I doing wrong?

Is your Apple TV 2nd generation 4K? (model year 2021)

I think you have to turn off continuous audio connection if you don’t want stereo to be sent in a 5.1 PCM signal. (Technically stereo is also PCM format, but I know Denon just says “Stereo” on the front)
 
I can't see how any of these features warranted dropping the 4K 1st gen. The 4th Gen/HD I can somewhat understand as it's had a good/long run (that being said they were still selling it under 4 years ago). I think it was a last minute decision to drop both models from 27, as the developer site said "Apple TV HD and newer" and my 1st gen 4K was showing "tvOS 27 Developer Beta" as an enrolment option.

I'm a bit miffed as I made decisions based on assuming that given the 4th Gen was still supported that the 4K 1st gen would get at least one more update.

Now obviously I understand that it won't just stop working, but it has effectively shortened the life of the device in terms of being secure - I assume there will be 1 year of security updates (though given how inconsistent Apple is with security updates outside MacOS, who knows!).

Very likely has to do with all of the stability and speed improvements they have made.
They were already having to differentiate the complete interface between the HD and 4K first generation with 26, where the older models did not receive the new Liquid Glass UI and the 4K 2 and 3 did.
That obviously wasn’t going to work long term.
The good news is that, since the Apple TV doesn’t really have an open browser, security updates are really not as important as they are on iOS or macOS. For The basic tasks of streaming movies and airplay, it should still work for at least another five years, maybe even longer.
 
How is the stability of 27? Are performance improvements worth dealing with a Developer beta?

I’ve been on 27 for about a week, other than some quirks with changing input on my TV, I haven’t noticed a difference in stability compared to 26.5 on my 4K third gen.

ive noticed a constant stutter using tvOS 27 beta on the YouTube app. Every time a next video plays, it horribly stutters like 4 times a second until I pause and restart it. I don't even need to pause it long (like to buffer). just a quick start stop. its the only streaming app im having the issue with so I assume its NOT due to my network. I have a full commercial grade network rack that speed tests out to my full 1Gbps speeds on the Apple TV and reboots entirely every Monday. anyone else having issues with the YouTube app? once I pause and play, the video plays without issue. I think its the app itself, just want to troubleshoot it to be sure.

I've had the same issues, along with some weird audio things on Youtube.
 
Is it weird I'm glad they aren't doing anything dramatic that could possibly wreck the AppleTV? Its solid. It does waht it needs to. No boat rocking needed.
