So Twelve South released a case for the iPad and all your mac peripherals, that looks like a book. And old leather bound book. It looks a bit thick, but I love what it does; neatly packing everything on case rather than it rolling around in your bag.

Problem is I can't for the life of me understand why it looks like a book, or what reason there is for this. I'm not a fan of 'kitschy' stuff. Are there other products out there like this that someone can recommend?

Ah. You mean the Twelve South BookBook Travel Journal.
The Cocoon GRID-IT system might be something similar.

Also check out some of the accessory pouches and cases from SFBags/Waterfield (sfbags.com). Top-notch quality stuff.

The Cocoon seems great in theory but I had problems with the rubber bands stretching out over time or losing their grip on chargers, etc. and things just being rather annoying to take out of the bag. The pouches are easier and more straightforward.
