On websites that are two wide to display in the window, you can use a two finger gesture to scroll right, but trying to use the same gesture but to the left causes Safari to go back a page instead. Does anyone know how to turn off the behavior?

Go to the trackpad settings under system preferences. You should be able to change the gesture behavior there

Your answers was a little vague... it appears that

System Preferences > Trackpad > More Gestures > Swipe Between Pages was the thing I was looking for... setting it to "swipe left or right with three fingers" appears to have resolved my issue.
