Sorry I'm a complete noob at this. But I have two hard drives. I would like one to act as my boot drive with my applications installed on it. And my second drive will be for my music/photos.... How would I set this up?

Well, you would install the OS on the one you want to use as your primary hard drive (installing applications), and then you would tell iTunes and iPhoto to use the other hard drive for their files.

Just remember to put a check mark in iTunes saying that you do not want to import files to the hard drive, and want to keep them at their original location.
 
Is it possible to have all my documents, pictures, music, basically my home folder on the second drive? If so how would I do it?
