Im planning on buying two more 27" iMacs for my business. But when they are not in use I would like to use them as external monitors for my own 27" iMac. So can I connect two iMacs via Thunderbolt to my iMac? I don't see why this wouldn't work, but would like to know if anyone knows for sure. Thanks!

As long as all the iMacs have Thunderbolt then that would work just fine. I'd recommend contacting AppleCare to see if it will support both of the other iMac's. One I know would work with no problem however 2 I'm not 100% sure.
