I know you can only pair an Apple Watch with one iPhone at a time. But wondering if anyone has found some shortcuts or workarounds. Besides buying two watches of course :). thanks

I think your two watch solution is the only one. Otherwise you have to erase/repair every time you switch.
 
Given that I'm still learning how my AW series 4 works, I would think that pairing a single AW with two iPhones would end up confusing the watch. Two different iPhones will end up having something different between them and this may cause confusion and/or excess battery usage with the watch trying to keep up with two phones.
