I’m such a freaking band addict that I want a silver watch to go with bands that don’t look good with gold. But there’s no way to switch back and forth with regard to LTE without paying for an additional device on my data plan, right? (I really want that red/black band that only comes on LTE.)

Which specific band are you referring to?
 
Yes, you can switch back and forth (at least on AT&T). But it's a little tedious.

Make the watch without cellular active in the Watch app (on the phone) and select "Set Up Cellular." You'll be asked whether you want to "Add device" or "Replace a synced device". Select the latter.

It takes several minutes and sometime a couple attempts but it works.

Oh, interesting! I’m on Verizon, but still. I bet this works.
