With a minidisplayport to dual link dvi adapter and a dual link dvi splitter, shouldn't I be able to connect to monitors to one of the new macbook pros?

A DVI splitter will send out two identical images on each output. Is that what you want to do? Or do you want to run two displays in extended desktop mode? If you want extended desktop mode, you need a Matrox DualHead2Go or TripleHead2Go (Digital Edition allows for 1920x1200 on dual displays).
