The activity piece on the Apple watch use to have a timed interval that I could set to get alerts...

I don’t see this option anymore so has that gone away or am I missing it somewhere in the settings?
If there’s no option in the settings then how often will I be receiving these updates?

Second it says I can have this:
  • App home screen available in an alphabetical list view

How I apply this setting?

Don’t understand the first question but for the second hard press on the app screen & select List view.
 
Your activity updates could be set how many times you wanted it displayed throughout the day. Now it can’t be....?
