That is a good question. Are you trying to support both on same phone
I have my beta dev watches on their own beta phone devices and not my personal items.
one beta watch ( I THOUGHT all this time ) was a series 0 and I just checked and it turned into a series 1
When Apple fixed my series 0 ( expanded battery problem ) they sent a series 1 back ( over night shipping too )

Yes, I was able to do it. Disabled auto-switch in the Watch app, selected the one I will use for dev, installed dev profile.
